Made from 100% Riesling, “Hills & Valleys” draws from vineyards across the Clare Valley, where elevation, cool nights, and ancient, well-drained soils provide ideal conditions for preserving Riesling's natural acidity and aromatic precision. The region's warm days encourage ripe fruit flavors, while dramatic diurnal temperature shifts help maintain the grape's characteristic freshness.

The fruit is harvested with an emphasis on preserving varietal purity and acidity, then gently pressed and fermented at cool temperatures in stainless steel. The wine is made to emphasize freshness rather than oak or overt winemaking influence, allowing the citrus, floral, and mineral character of Clare Valley Riesling to remain front and center.

The 2024 vintage is especially appealing for its combination of vibrant acidity and ripe citrus fruit.
