ABOUT THIS WINE

The 2025 Moulin de Gassac Pays d’Oc Chardonnay is a 100% Chardonnay from the Languedoc. It is part of the estate’s more approachable Moulin de Gassac range rather than the flagship Mas de Daumas Gassac Blanc, which is a multi-variety blend.

The Chardonnay comes from the Thau Lagoon area, near the Mediterranean coast. The vineyards sit on clay-limestone soils rich in marl. This Mediterranean setting gives the wine ripe fruit and generosity, while the coastal influence helps retain freshness. 

The wine is made entirely from Chardonnay. The grapes are fully destemmed, followed by a short three-hour skin maceration. Fermentation is carried out at low temperature, and the wine is then aged for 5–6 months entirely in stainless steel. There is no oak-aging component listed by the estate, so the emphasis remains on freshness, fruit and Chardonnay's naturally creamy texture. Yield is approximately 50–60 hl/ha.

ABOUT THIS PRODUCER

Mas de Daumas Gassac is a family-owned estate in the Gassac Valley near Aniane in the Languedoc, founded by Aimé and Véronique Guibert in the early 1970s. After discovering the property’s distinctive soils and cool microclimate, the Guiberts began planting vineyards in 1972 and produced their first red wine in 1978 with guidance from renowned Bordeaux oenologist Émile Peynaud. The estate became an important part of the Languedoc’s shift toward ambitious, terroir-driven fine wine.

The estate takes an unusual approach to viticulture, with more than 50 small vineyard clearings surrounded by Mediterranean forest and garrigue rather than one continuous vineyard. This diverse landscape, combined with the valley’s cooler conditions, helps preserve freshness and complexity in the wines. Today, the second generation of the Guibert family continues the estate’s philosophy, with an increasing emphasis on elegance, freshness, biodiversity, and careful vineyard management.

The family also produces the Moulin de Gassac range, established in 1991 to offer more approachable wines while maintaining the family’s focus on quality and terroir. Working with selected vineyard parcels and local growers throughout the region, Moulin de Gassac showcases the diversity of the Languedoc through fresh, expressive wines—including the Pays d’Oc Chardonnay—designed for earlier drinking than the flagship Mas de Daumas Gassac wines.
