Bethmale des Pyrénées is a traditional cow’s milk mountain cheese from the Ariège Pyrénées in southwestern France, particularly associated with the Bethmale Valley and the Couserans near Saint-Girons. It is one of the region’s classic cheeses and is especially recognizable by its rustic rind and unusually open, airy paste.
Bethmale is traditionally a semi-firm, uncooked cheese (pâte pressée non cuite). Traditionally, the curd is molded and drained before the wheels are matured in cool, humid cellars. During affinage, the rind is brushed and tended, gradually developing its characteristic rustic beige-to-orange appearance.
