2019 Chateau D'Oupia Rouge Minervois, Languedoc, France

This red from Minervois from Château d'Oupia comes the older vines of the estate, including some Carignan from hillside plantings that are up to 100 years old. Fermented in concrete vats and bottled unfiltered. Calls for burgers and fries.

This bottling comes the older vines of the estate, some up to 100 years old and on the hillsides of Minervois hillsides, with some Carignan up to 100 years old. They are sustainably farmed and harvested partly by hand and partly by machine. The Carignan remains in whole clusters and undergoes a full carbonic maceration; the Syrah and Grenache are destemmed and macerated up to 30 days. Fermentation is with selected yeasts in concrete vats; aging takes place in vat as well. The wine is bottled without fining or filtration.

Marie-Pierre Iché has been running this large, old-vine estate, complete with 13th century castle since the death of her father André in 2007. André was never a member of the village co-op, choosing instead to tend his own vines and make his own wine. However, he sold his wine in bulk to local negociants until a visiting Burgundian winemaker convinced him to sell them under his own name.
