Comté "20 Months", Cow's milk, Jura, France, 0.5lb/Cut
Comté “20 Months” is a mature expression of Comté AOP, the celebrated raw cow’s milk cheese of France’s Jura Massif. At 20 months, it has developed considerably more concentration and complexity than younger Comté while typically retaining a lovely balance of fruit, nuttiness, and buttery richness.
Comté is a raw-milk, cooked and pressed cheese (pâte pressée cuite) made exclusively from milk produced by Montbéliarde and French Simmental cows. It is traditionally produced in village dairies called fruitières, with around 400 liters of milk required for a 40 kg wheel.
After production, the wheels are transferred to specialist affineurs. They mature on spruce boards and are regularly turned and rubbed with salt. The legal minimum aging is four months, but selected wheels can mature for 18, 24 months or even longer, depending on their potential.
