ABOUT THIS WINE

The crown jewel of the domaine is the famous ‘Clos du Chapitre’ – one of only five Premier Cru sites in Fixin and a Monopole for Dufouleur. Clos du Chapitre is located north of Cote de Nuits, next door to the village of Gevrey Chambertin on a hillside plot. The average age of the vines are 65 years producing tiny, concentrated yields.

The harvest is done by hand. The grapes are then meticulously sorted at the winery. Enzymage, yeasting, cold pre-fermentation maceration for one week, daily pigeage, warm maceration. Aged for 12 months in oak barrels, of which 1/3 new, malolactic fermentation in barrels, then assembly in stainless steel tanks for 3 months. Light filtration to bring more clarity and aromatic purity.

Domaine Guy & Yvan Dufouleur was established on the slopes of Nuits-Saint-Georges in 1596, and is currently managed by Yvan Dufouleur and his uncle Xavier. The Dufouleur family sold the negociant arm of their business, “Dufouleur Père et Fils,” in 2006, wanting to focus exclusively on estate bottled wines. Four hundred years is a long time for any winery, and through the centuries the family has acquired a whopping 28 hectares of prime vineyard sites extending from Fixin to Santenay. This portfolio includes the exclusive ownership of Fixin Clos du Chapitre Premier Cru. Farming is natural, and cellar work is hands-off. These sensory, revelatory wines are a must for anyone interested in distinctive Burgundy.
