ABOUT THE WINE

Fuoripista—meaning “off-piste” or “off-track”—is Foradori’s radical rethinking of Pinot Grigio. Made from biodynamically grown grapes sourced from a partner grower on the Campo Rotaliano, the wine undergoes spontaneous fermentation with native yeasts and macerates on the skins for over 8 months in Spanish clay amphorae (tinajas). Bottled unfined and unfiltered, with only minimal sulfur, this wine is a true skin-contact Pinot Grigio (a so-called “ramato” style), emphasizing varietal depth and terroir over fruit-forwardness.

The 2019 vintage shows a balanced interplay of freshness and phenolic grip, with wild orchard fruit, dried citrus peel, and earthy undertones. It pairs beautifully with root vegetables, lentils, charred greens, aged cheeses, and spice-accented vegetarian dishes.

ABOUT THE PRODUCER

Elisabetta Foradori has long been a trailblazer in biodynamic viticulture and natural winemaking. Based in Trentino’s Campo Rotaliano, the estate is renowned for its revival of Teroldego and its commitment to integrity in both vineyard and cellar. Certified biodynamic by Demeter since 2009, Foradori focuses on regenerative agriculture, native grapes, and low-intervention techniques—particularly the use of clay amphorae for fermentation and aging.

Fuoripista is the result of a collaboration between Elisabetta and biodynamic consultant Marco Devigili. It embodies Foradori’s willingness to go against convention in order to reveal deeper truths about variety and place. This is not Pinot Grigio as commodity—it is Pinot Grigio as art.
