ABOUT THE WINE

Vaillons lies in a side valley on the left bank of the Serein, where southeast-facing slopes receive morning sun and cool toward evening. Louis Moreau’s holdings include the Roncières, Sécher and Chatains climats. Kimmeridgian clay-limestone soils and vines averaging about 52 years give this Chardonnay a precise vineyard identity within Chablis’ premier cru landscape.

The 2024 is hand harvested and fermented spontaneously in stainless steel. Full malolactic fermentation and approximately 16–18 months on the fine lees build a generous texture, while steel keeps the emphasis on fruit and site rather than barrel flavor. The result balances a fleshy middle palate with lively acidity and the mineral character associated with Chablis.

Subtle floral and citrus notes complement its freshness. At the table, roast chicken with herbs or seafood pasta in a light cream sauce can match the wine’s breadth without overwhelming its detail. Serve cool enough to retain its energy, allowing it to open gradually in the glass.

ABOUT THE PRODUCER

Louis and Anne Moreau founded their domaine in 1994 using family vineyards that had previously been leased to J. Moreau & Fils. Based in Beines, the estate extends across Petit Chablis, Chablis, premier cru and grand cru sites, including holdings in four of the region’s seven grand cru climats.

The domaine’s guiding aim is to make the differences between those sites clear. Vineyard care follows lutte raisonnée, a measured approach to treatments, with selected premier and grand cru parcels moving toward organic farming. Massal selection is preferred for replanting, helping preserve diversity within the vineyards. Spontaneous fermentation for most cuvées, extensive use of stainless steel and gentle filtration reflect a cellar philosophy centered on clarity and freshness.
