ABOUT THIS WINE
Fresh but disciplined. A blend of Syrah and Grenache, our Rosé is a finely textured, complex Syrah-Grenache blend. This perfumed Rosé is reminiscent of the fleshy texture of roses. The estate collects medieval rose varieties, some of which are planted around the house, while others can be found in the medieval herb garden and walled “potager”, inspired by the one that figures prominently in the romantic treatise Le Roman de La Rose. Soils here are are very stony, mixed with clay and limestone at a high elevation of over 500m.
It is made in a multi-step process relying on skin contact - a short maceration, not by the traditional saignée method - in order to reveal the full texture and character of the grape variety and give it nice length and structure. The wine fermented and aged in stainless steel with 2 months of battonage for added texture. A portion is briefly aged in barriques to impart depth before final bottling. Fining is done using organic green pea powder, making this wine strictly vegan.
