Courrone literally translates as the crown and is named after its doughnut shape. Courrone de Touraine is an aged goat’s milk cheese from the Loire Valley that’s buttery, creamy, and an absolute delight! The rind is bloomy and brainy with ash that also comes through to the surface. It’s full of goaty and grassy aromas that tickle the nose the moment you open the package. Each bite has a little acid, but the cheese is very herbaceous, especially near the rind. Pair this with a Sancerre for a match made in French heaven.
