After a gentle crush and brief time on the skins to add just a pretty touch of color, each lot finishes fermentation in steel before blending for complexity and depth of flavor.

ABOUT THIS PRODUCER:

Domaine d'Eole is located at the foot of the Massif des Alpilles, in the French department of Bouches-du-Rhône. It produces wines in a Mediterranean style under the influence of the Rhone. The winery has cultivated its vineyards organically since 1996 and the yields of their plots are very low, some 30 hectolitres per hectare, thus producing very concentrated and balanced grapes.

The vineyards for Domaine d'Eole Rosé are planted on sand and limestone soils with a high stone content, and are harvested by hand to respect the grapes as much as possible and to make a first selection of the bunches while still in the field.
