2021 Domaine Servin Chablis "Les Pargues", Burgundy, France

Love this Chablis! If you want to explore the purity of the terroir this is a great beginning. Approachable with a soft mouth feel and bright citrus notes, a hint of salinity. Clean and refreshing.

Racy and penetrating, the 2019 Chablis Les Pargues is a medium to full-bodied, elegantly textural wine evocative of orchard fruit, confit citrus, clear honey and white flowers. It has turned out very well and retains a classical profile in this extreme vintage.

Situated just a few kilometers due south of Chablis proper, wedged between Premiers Crus “Montmains'' and “Vosgros,” Les Pargues enjoys the southeasterly aspect of the former and, thanks to that grievous oversight all those years ago, produces one of the most scandalous values in all of Chablis.

Past generations of Servins were growing Chardonnay in Chablis as far back as the 16th century when the monks in the local monastery cited their vineyards as the source of superlative fruit. François Servin is the latest to carry the torch, and with 40-year-old vines at his disposal in Les Pargues, he’s got one of the great “secret weapon” wines of all time in his arsenal.
