Produced in the historic appellation of Chablis, “Les Pargues” is crafted entirely from Chardonnay grown on the region’s famed Kimmeridgian limestone soils. The 2023 vintage showcases bright flavors of Granny Smith apple, pear, and fresh lime, complemented by a distinctive saline minerality that reflects its cool-climate origins.
Grapes are carefully harvested and gently pressed before fermentation in stainless steel to preserve aromatic purity and freshness. Depending on the vintage, a portion may see neutral oak aging to add subtle texture without overshadowing the wine’s linear precision. Extended lees contact enhances mouthfeel while maintaining the hallmark tension and clarity of Chablis.
Crisp and elegant, this wine pairs beautifully with oysters, shellfish, grilled white fish, goat cheese, and light poultry dishes. Its lively acidity and mineral backbone make it a classic companion to seafood-driven cuisine.
