Le Crottin d’Antan is a small, traditional-style goat’s milk cheese from Poitou-Charentes in western France, made by Fromagerie Poitou Chèvre at the historic dairy in Bougon, Deux-Sèvres. Each petite round has a wrinkled natural rind and a dense, creamy center, with a flavor that becomes increasingly pronounced as it matures.
Crottin d’Antan is made exclusively from fresh, whole pasteurized goat’s milk collected in Poitou-Charentes. The cheeses are hand-molded individually, traditionally drained, and then matured in ripening rooms for around two weeks, with some examples aged for two to four weeks.
It belongs to the lactic goat-cheese family. The small rounds develop a thin, naturally wrinkled rind surrounding a bright white paste. When young, the interior is tender, moist, and creamy; with further aging, it becomes progressively denser, drier, and more crumbly.
