Moelleux des Alpes aux truffe, cow's milk, Haute-Savoie, France - 8.8oz/Each
Mild, buttery, milky and creamy, with some gentle woodland/earthy character. The truffle adds a noticeably mushroomy, earthy, forest-floor aroma without overwhelming the dairy richness.

This is a rich, soft-ripened Alpine cheese from Haute-Savoie, France, made by Fromagerie Bouchet, a family cheesemaker based in Beaumont near Mont Salève. It’s one of their signature creations.
It’s made from raw cow’s milk and belongs to the soft, bloomy-rind family—think somewhere in the broad textural neighborhood of Coulommiers or a very creamy Reblochon-inspired cheese. Bouchet actually describes the production as following essentially the same process as Reblochon, but with Penicillium camemberti cultures to develop the white bloomy rind. The cheese is then enriched with pieces of summer truffle (truffe d’été).
The standard cheese is around 400g, with roughly 15–21 days of affinage. The rind is ivory-white with a fine downy bloom, while the interior becomes supple, creamy, and melting, especially as it ripens.
