ABOUT THE WINE

César Florido’s Cruz del Mar Fino comes from Palomino grown in the family’s Balbaína and Miraflores vineyards. Fermentation takes place in traditional cement vats, followed by fortification and three years of biological aging beneath a continuous veil of flor.

The solera sits in a Chipiona bodega only 50 meters from the Atlantic. That maritime setting favors the thick flor that defines the wine’s bone-dry, crisp and saline profile. Bottled en rama, without fining or filtration, it retains a direct connection to the cask. Serve well chilled with oysters, olives, almonds or fried fish.

ABOUT THE PRODUCER

Bodegas César Florido was founded in 1887 and is maintained by the fifth generation of its founding family. It is the oldest bodega in Chipiona and one of the few independent houses still working outside the village cooperative.

The family shifted from supplying other Sherry houses to bottling its own wines in 1988. Today, its range preserves both Chipiona’s celebrated Moscatel tradition and Palomino wines shaped by the nearby ocean. Native fermentation, long-established soleras and close attention to the local cellars are central to that identity.
