ABOUT THE WINE

N.S. della Neve is G.D. Vajra’s sparkling rosé, produced in Piedmont from Nebbiolo and Pinot Noir. The combination is particularly compelling: Nebbiolo contributes fragrance, acidity, and savory structure, while Pinot Noir brings bright red fruit, delicacy, and breadth. Rather than emphasizing sweetness or overt richness, the wine is crafted around freshness, finesse, and gastronomic versatility.

The name “N.S. della Neve” refers to Nostra Signora della NeveOur Lady of the Snow—and reflects the deep connection between the Vajra family and the high hills of the Langhe. The estate’s vineyards around Barolo are among the highest in the denomination, where cooler nights and extended ripening help preserve acidity and aromatic detail. That cool-climate sensibility carries into this rosé, giving it an unusually precise and lifted personality.

The fruit is harvested with an emphasis on freshness, followed by gentle pressing and temperature-controlled fermentation. A secondary fermentation creates its fine effervescence, while time on the lees contributes subtle texture and yeasty complexity without obscuring the wine’s vibrant red-fruit character. The finished style remains bright, dry, and elegant, very much in keeping with Vajra’s preference for wines of perfume and energy rather than weight.

Serve well chilled, around 43–47°F (6–8°C). Its combination of bubbles, acidity, and delicate red fruit makes it an excellent aperitivo, but it is equally successful with prosciutto and salumi, fried seafood, sushi, smoked salmon, pizza, fresh cheeses, vegetable antipasti, or light pasta dishes.

ABOUT THE PRODUCER

G.D. Vajra is a family-run estate based in Vergne, the highest village in the commune of Barolo. The winery was founded in 1972 by Aldo Vajra, whose early commitment to organic farming and biodiversity was highly unusual in the Langhe at the time. Today, Aldo and Milena Vajra work alongside the next generation of the family, continuing to produce wines that combine traditional Piedmontese character with remarkable purity and finesse.

The family farms vineyards across several important Barolo sites, including the celebrated Bricco delle Viole, and works with a broad range of Piedmontese varieties. While Nebbiolo and Barolo sit at the heart of the estate, Vajra has long demonstrated an inquisitive spirit through its work with Barbera, Dolcetto, Freisa, Riesling, and sparkling wines, among others.

Vajra’s farming philosophy centers on healthy soils, biodiversity, careful handwork, and minimal intervention, while cellar practices are designed to preserve perfume and vineyard identity rather than impose a house style through heavy extraction or excessive oak.
