ABOUT THIS WINE

“Les Grandes Côtes” is a single-vineyard cuvée sourced from a southwest-facing plot in Celles-sur-Ource planted exclusively to Pinot Noir. The vines grow on Kimmeridgian clay-limestone soils, which lend the wine its firm mineral core and energetic structure. Farmed sustainably with an emphasis on biodiversity, the vineyard expresses Pinot Noir with purity and finesse. The wine is vinified in stainless steel with indigenous yeasts, undergoes full malolactic fermentation, and spends over 30 months on the lees before disgorgement with a minimal Extra Brut dosage. The result is a layered and focused Blanc de Noirs showing tension and depth, with flavors of raspberry, blood orange, and crushed stone. It pairs beautifully with duck breast, charcuterie, or aged alpine cheeses.
