ABOUT THIS WINE
Sourced from multiple plots around the village of Celles-sur-Ource in the Aube, “Grains de Celles” is a balanced field blend of roughly 50% Pinot Noir, 25% Chardonnay, and 25% Pinot Blanc—a historic variety rarely seen in Champagne today. The vineyards, farmed sustainably and without synthetic inputs, lie on Kimmeridgian limestone-clay soils, lending the wine its linear minerality. Fermentation and aging take place in stainless steel with full malolactic conversion. Aged on lees for around 30 months and finished with minimal dosage (Extra Brut), the wine is a vivid expression of terroir, showcasing notes of pear skin, citrus pith, white cherry, and chalk. Its compact size makes it a perfect pairing for oysters, jamón ibérico, or a picnic with goat cheese and baguette.
