ABOUT THIS WINE
Fondillón is a wine from the PDO Vinos Alicante, made from overripe Mourvèdre grapes. Dehydrated, overripe grapes of exceptional quality are hand-selected for this product. Fermentation lasts for 20-30 days. Aging takes place for a minimum of 10 years. During this aging period, each barrel undergoes oxidation that causes some of the wine to evaporate and is refilled or topped off to keep the wood intact. in perfect conditions it can be aged for decades. The wine is drier than sweet. It does not have additives and its alcohol is natural.
ABOUT THIS PRODUCER
Bodegas Monovar operates in new facilities on the road from Monóvar to Salinas, in front of Toscar and the old manor house of the Azorín family. Its barrels come from the old Salvador Poveda wineries located in the heart of this town. Next to its imposing aging warehouse there is a small “sacred” cellar with limited and very unique productions.
