ABOUT THIS WINE
Rocca di Montegrossi's Vin Santo del Chianti Classico is crafted exclusively from Malvasia Bianca del Chianti, a grape variety prized for its aromatic complexity and thick skin, which aids in the drying process. The grapes undergo a traditional appassimento method, drying on ventilated racks in the "Vinsantaia" (attic) for approximately 3–4 months, during which they are susceptible to noble rot (botrytis cinerea), enhancing the wine's depth and richness.
After drying, the grapes are pressed, yielding a concentrated must that is aged for nearly 8 years in small barrels (caratelli) made of cherry, oak, and mulberry wood. This extended maturation imparts complex flavors and a velvety texture to the wine. The annual production is limited to fewer than 2,000 half-bottles (375 ml), highlighting the artisanal and exclusive nature of this Vin Santo.
