ABOUT THIS WINE

All of the fruit was gently destemmed and soaked at 50 degrees for 3 full days. Berry crushers were not utilized allowing 20% or more of the berries to remain whole. Post cold soak the tank temperature was increased to 70 degrees for the first half of fermentation and increased again to 90 degrees for the final half. Each fermentation was pumped-over twice daily with maceration from 12 to 28 days.

The wine is aged in 10% new, 90% neutral oak for 8 months.

ABOUT THIS PRODUCER

Lapis Luna translates to “stone” and “moon.” Their labels bring to life 400 year old Copperplate engravings to depict the relationship between the earth (stone), the moon (luna), and the affect she has on us. The heroes are depicted striving to connect with the moon and looking to it for inspiration, just as the winemakers do when creating the wines. Lapis Luna is the effect of the moon on California grapes.
