ABOUT THIS WINE

The Millesimato Pas Dosé is Contratto’s vintage-dated expression of Alta Langa—Piedmont’s answer to méthode traditionnelle sparkling wine. Made entirely from Pinot Noir and Chardonnay (the precise blend may vary by vintage), the grapes are sourced from organically farmed, high-elevation vineyards in the provinces of Asti, Cuneo, and Alessandria. These sites, perched above 600 meters, benefit from wide diurnal shifts and calcareous soils, contributing to the wine’s vibrant acidity and complex aromatics.

Fermentation is carried out in stainless steel with a focus on preserving freshness and varietal character. Secondary fermentation occurs in bottle (traditional method), followed by aging on the lees for over 36 months, lending texture and subtle autolytic nuance. Bottled Pas Dosé—with no sugar added at disgorgement—it is a pure, unmasked expression of vintage, terroir, and craft.

This sparkling wine is sharp and gastronomic, with aromas of fresh citrus peel, crushed rocks, fennel, and toasted hazelnut. It pairs beautifully with raw seafood, oysters, alpine cheeses, or even delicate vegetable dishes like asparagus with beurre blanc.
