ABOUT THIS WINE

Les Nogers is a single-vineyard Blanc de Blancs from 40-year-old Chardonnay vines rooted in the chalky soils of Cuis, a Premier Cru village on the northern edge of the Côte des Blancs. The parcel is farmed biodynamically, and the 2019 vintage—entirely from this site—was vinified with indigenous yeasts and aged in used Burgundy barrels. The wine underwent full malolactic fermentation, gaining textural roundness to counterbalance its naturally racy profile.

Bottled with a minimal Extra Brut dosage (around 2 g/L), Les Nogers showcases clarity and terroir expression: green apple, citrus zest, wet chalk, and a touch of fresh almond, all lifted by mouthwatering acidity and a sleek, mineral-driven structure. Aging on the lees prior to disgorgement enhances its finesse and subtle complexity.

Perfect with delicate fare like sashimi, oysters, or blinis with crème fraîche, but it also pairs beautifully with alpine cheeses or lightly poached lobster.

Dhondt-Grellet is a rising star in grower Champagne, led by Adrien Dhondt, who has transformed his family’s domaine into one of the most terroir-focused and expressive in the region. Located in Flavigny near Avize, the estate cultivates just over 6 hectares, working with old vines across Grand and Premier Cru villages.

Since taking over in 2012, Adrien has embraced biodynamic practices (without certification), prioritizing soil vitality and balanced ecosystems to produce healthy, expressive fruit. In the cellar, his minimalist approach—natural fermentations, oak aging, minimal sulfur, low dosage—allows the purity of site to shine through.
