ABOUT THIS WINE
Barolo production blends grapes from four vineyards, co-fermented in large concrete tanks. While the tanks lack internal temperature control, temperatures are carefully monitored and cooled if needed. Indigenous yeasts drive fermentation, with pump-overs twice daily and occasional yeast additions. Maceration lasts 30–50 days, adjusted annually based on vintage character. A gentle hydraulic basket press is used.
The wine then ages for about 30 months in Slavonian oak casks (25–50 hL) in a natural cellar, undergoing spontaneous malolactic fermentation. It is racked once a year and bottled in late July, three years after harvest. Bottles are cellared for another year, with release in the fourth year post-vintage.
