ABOUT THIS WINE

Though Nuits-Saint-Georges is predominantly red wine territory, Domaine Robert Chevillon crafts a small quantity of white from old Chardonnay vines planted in limestone-rich soils just outside the village. Labeled as “Vieilles Vignes,” this cuvée comes from low-yielding vines aged 50+ years, farmed sustainably and harvested by hand. The 2021 vintage—a cool, classically styled year—emphasized finesse and structure, making for a particularly refined white.

Fermentation takes place in oak barrels (a modest portion of which are new), followed by 12–14 months of aging on lees, with gentle bâtonnage as needed. The result is a wine that balances the weight and texture of old-vine fruit with the precision and mineral drive characteristic of the northern Côte de Nuits.

While delicious young with dishes like poached fish, roast chicken, or vegetable gratin, this wine also has the structure to develop gracefully over 6–8 years, gaining complexity and a nutty, savory edge with time.
