ABOUT THIS WINE

The grapes are handpicked and sorted by hand. Maceration last around 2 weeks with the extraction carried out mainly via pumping over operations (remontage) in order not to extract too much bitterness. The grapes are entirely destemmed. The wines are aged for 16-18 months in French oak barrels, of which around 20% are new.

ABOUT THIS PRODUCER

The Maison Jaffelin was founded in 1816 and is today considered to be the smallest of the great Bourgogne wine houses. Jaffelin’s wines are vinified and aged in the historical center of Beaune in the prestigious 12th-century cellars of the Chapitre de Notre Dame. The use of artisanal equipment such as a vertical press and oval wooden vats allow Marinette Garnier, Jaffelin’s winemaker, to produce hand-stitched cuvées. Born in the heart of Burgundy, Marinette is proud of her roots. Despite her youg age, she has already obtained valuable experience at other prestigious wine houses and domaines (Domaine des Comtes Lafon, Méo-Camuzet, Bouchard Père & Fils).
