ABOUT THIS WINE
The estate has long opted for traditional winemaking: manual harvests, passage on a sorting table, destemmed grapes with the trial of whole harvests for a few years, vatting 10 to 15 days, manual punching down and pneumatic pressing. The objective is to preserve the terroirs and climates and to best express each vintage. Pascal and Pauline pay the greatest attention to the aging of the wines by preserving the Burgundian method: aging in French oak barrels. This allows the wine to fully express their character, their terroir and their typicity. The red wines are aged on lees until bottling and then undergo filtration to bring clarity and sharpness to the wines.
