Fanny Sabre’s Bourgogne Aligoté 2022 is sourced from organically farmed vines rooted in limestone-dominant soils near Pommard and Beaune—sites that lend structure and mineral tension to this often-overlooked Burgundian variety. Aligoté is traditionally known for its lightness and crispness, but under Fanny’s hands, it gains texture, depth, and finesse.
Vinified naturally with indigenous yeasts, the wine undergoes fermentation and aging in older oak barrels rather than stainless steel, lending subtle creaminess and complexity without overt oak character. Minimal sulfur is used at bottling, allowing the varietal purity and sense of place to shine. The result is a clean, focused wine that balances citrus vibrancy with savory nuance and saline minerality.

Fanny Sabre is one of the most exciting names in natural Burgundy. After taking over her family’s domaine in her early twenties (following her father's passing), Fanny quickly developed a reputation for crafting honest, elegant wines from some of the Côte de Beaune’s top terroirs. With guidance early on from natural wine icon Philippe Pacalet, she has embraced low-intervention winemaking rooted in organic farming and traditional Burgundian methods.
Working from a modest cellar in Beaune, Fanny vinifies her wines parcel by parcel, using native yeasts, minimal sulfur, and mostly used oak to preserve each wine’s distinct identity. Her Aligoté is a prime example of how this often-underestimated grape can deliver refinement, mineral tension, and sheer drinkability when grown and vinified with care.
