Sourced from a parcel in the southeastern corner of Hiyu Wine Farm, the "Aesalon" vineyard was grafted in 2016 from Pinot Gris to a diverse field blend of Spanish and Portuguese white varieties, including Xarel-lo, Arinto, Verdelho, Albariño, Trousseau Gris, Godello, Albillo Real, and Macabeo. The 2022 vintage reflects the unique terroir of the Columbia Gorge, with its eastern exposure and complex soil composition contributing to the wine's distinctive character. The grapes undergo a short maceration period before being foot-pressed into old barrels for fermentation, followed by an extended élevage of approximately 20 months. This meticulous process results in a wine that showcases a medley of citrus and orchard fruit flavors, intertwined with floral notes and a pronounced minerality. The textured palate is supported by a lively acidity, culminating in a long, refined finish.
