ABOUT THIS WINE

Composed of 80% Chardonnay and 20% Tocai Friulano, "Slatnik" comes from organically farmed vines rooted in the mineral-rich Ponca soils of Oslavia. Grapes are harvested by hand and fermented with indigenous yeasts in large oak vats, where they macerate on their skins for 8 to 14 days. Gentle manual punch-downs during fermentation help extract color and structure. After fermentation, the wine is aged for 18 months on the lees in large Slavonian oak casks, and then bottled unfined, unfiltered, and with minimal sulfur.

Its profile is both approachable and complex—layered with stone fruit, dried flowers, orange peel, and a savory, earthy core. The slight grip and pronounced minerality make it an excellent pairing for roasted poultry, vegetable terrines, or firm alpine cheeses.
