ABOUT THIS WINE
Aromatic ripeness is the target factor in determining the harvest date. Harvesting early in the morning enhances light skin maceration, and long and gentle grapes pressing. After twenty-four hours, at low temperature, the juice is settled and then inoculated with selected yeasts to ensure a rapid alcoholic fermentation starts. Fermentation takes place between 18 and 20° Celsius for optimal thiol revelation. The wine is then aged in stainless steel tanks for several months on lees, with stirring of the lees. The Sauvignon Blanc vines are grown mainly on a clay-loam terroir to produce a fresh, aromatic white wine. The clay reveals the fruit and aromas typical of Sauvignon Blanc, while the loamy soil brings out its freshness.

Since 1710, the DUBERGE family has been passing on its passion and winemaking expertise for eleven generations. Christophe DUBERGE, successor to his father Pierre DUBERGE, owns the seventy-hectare Château Saint-Sulpice estate, located in Saint-Sulpice-et-Cameyrac, a village in the Entre-deux- Mers region, between Bordeaux and SaintEmilion.
