ABOUT THE WINE
This 100% Chenin Blanc is sourced from organically farmed vineyards in Anjou, rooted in shallow, metamorphic schist soils that impart a distinct mineral edge. The 2023 vintage was harvested by hand and gently pressed, with fermentation occurring using indigenous yeasts in a combination of stainless steel and older barrels to preserve aromatic clarity and lend gentle complexity. Aged on fine lees for several months, the wine shows layered citrus, pear, and white flower notes, underpinned by a chalky, linear structure. Its purity makes it an ideal companion to shellfish, goat cheese, light poultry dishes, or even subtly spiced Asian cuisine.
