ABOUT THIS WINE
The 2023 Domaine Fanny Sabre ‘Clos des Renardes’ Beaune Blanc is a pure‑Chardonnay expression from a small, biodynamically farmed parcel just outside the town walls of Beaune, where vines aged 30–50 years thrive on clay‑limestone soils under the shade of surrounding woods. Vinified using indigenous yeasts, the grapes are hand‑selected and gently pressed, with minimal sulfur added only shortly before bottling. Elevage takes place in large-format barrels (500 L) and older 228 L Burgundy barrels, with limited stirring and without racking or filtration, yielding around 900–1,200 bottles of this microcuvée per year. The wine is certified organic and produced as a natural wine, with minimal additives and a restrained sulfite regime.
ABOUT THIS PRODUCER
Fanny Sabre, who inherited the modest 4.5‑hectare domaine in 2005, quickly embraced organic conversion and biodynamic principles under the mentorship of Philippe Pacalet—focusing on low‑intervention, terroir‑driven Burgundies grown with plowing, cover crops, manual harvest, and yield control.
