ABOUT THE WINE
Sourced from the limestone-rich slopes of Grusse en Billat, a high-altitude site near the village of Rotalier, this Pinot Noir is farmed biodynamically and vinified with the same minimalist ethos that defines all of Ganevat’s work. The 2023 vintage was fermented whole-cluster with native yeasts and aged in used barrels, allowing the site’s transparency to shine through. No sulfur is used at any stage, and bottling is done without fining or filtration.
The wine opens with aromas of wild strawberries, red currants, rose petal, and subtle hints of white pepper and forest floor. On the palate, it’s lithe and energetic, with a mineral core and a tension that reflects both the vintage’s freshness and the high-elevation terroir. Its purity and finesse make it a versatile companion for dishes like duck breast, lentil salads, roasted root vegetables, or Alpine charcuterie.
ABOUT THE PRODUCER
Jean-François Ganevat stands at the intersection of Jura tradition and natural wine innovation. After refining his skills in Burgundy, he returned to his family estate in La Combe de Rotalier, where he now farms over 15 hectares using biodynamic principles and strict ecological stewardship. Ganevat works with an extraordinary range of local and international grape varieties, often vinifying tiny parcels separately to highlight micro-terroirs.
All of his wines are produced with spontaneous fermentations, long aging, and zero additions, including sulfur, creating wines of remarkable depth and singular identity. Grusse en Billat reflects Ganevat’s Pinot Noir philosophy: light in extraction, pure in expression, and deeply tied to place. His meticulous craftsmanship and refusal to compromise have made his wines benchmarks for authenticity in Jura and beyond.
