ABOUT THIS WINE

The name “Benedictus” refers to the area of San Benedetto where this vineyard is found. Sourced from a single parcel with the best sun exposure. 

Delicate pressing minimizes oxygen, contact with the skins at low temperatures for one day, native yeast fermentation, 25% of the wine is fermented and aged in oak. Occasional batonnage, the majority of the wine is aged in tank with about 25% in French Tonneaux barrels (500 liters) for 4-5 months, racked twice, followed by at least 6 months in bottle. FINING & FILTERING: Vegan, lightly fined with a pea protein. Minimal sulfites are used in making this wine.

In collaboration with World Biodiversity Association, no chemicals are used to protect habitat for the diverse bird population around Lake Frassino. Vineyards planted with flowers, grasses, and legumes to increase soil health and promote biodiversity.

ABOUT THIS PRODUCER

The story of Fabio and his brother Paolo Zenato is linked to the history and land of their area. Their property includes a small lake, Lago del Frassino, home to many rare water birds, and for these reason no chemicals are used in the vineyards to protect the ecosystem. Research at the family’s vine nursery has lead to the registration of more than 10 different clones of the Turbiana grape. Historically misidentified as part of the Trebbiano grape family, Turbiana is closely related to Verdicchio.
