The 2023 Chablis 1er Cru “Vau Ligneau” by Louis Moreau is crafted from 100% Chardonnay grown on Kimmeridgian limestone soils — rich in ancient marine fossils — which impart the wine’s signature minerality and linear tension. “Vau Ligneau” is one of the cooler, later-ripening Premier Cru sites on the left bank of the Serein River, contributing to the wine’s lifted aromatics and taut structure.
The grapes are harvested by hand and undergo gentle pressing, followed by fermentation in stainless steel to preserve vibrancy and purity. The wine is aged on fine lees for added complexity and texture, without oak, allowing the terroir to fully express itself.
