ABOUT THIS WINE
This elegant Sicilia Bianco is a blend of native Sicilian varieties—primarily Grillo, with smaller portions of Catarratto and Inzolia—sourced from organically farmed vineyards near Menfi, on Sicily’s southwest coast. Grown on calcareous and sandy soils under strong diurnal shifts and marine breezes, the grapes are harvested early to retain freshness and balance.
Vinified entirely in stainless steel, the wine undergoes spontaneous fermentation and is aged briefly on fine lees to enhance texture without sacrificing vibrancy. The result is a dry white that reflects the sun-soaked terroir while maintaining a lean, mineral spine. Ideal with grilled seafood, lemony pastas, caponata, or fresh cheeses, this wine thrives at the intersection of freshness and complexity.
