Soft and very delicate cheese, produced in the Loire, between the fine vineyards of Sancerre and Pouilly-Fumé. It has a very creamy texture and a very delicate, fine, but persistent flavor. This type of cheese is also called “a triple créme” (triple cream) because fresh cream is added during the production phase.
