In the 18th century, King Louis the 14th decided he wanted his cheese to be bright orange in order to distinguish it from its Dutch competitors. Annatto, which is a natural, orange pigment which comes from the fruit of the annatto tree is added to give the bold look of this cheese! A special ageing process helps in the maturation process and creates this cantaloupe-look. This cheese has burned butter and nutty flavors and finishes with a salty bite.
