The Napoleon takes its name from the mountain “Penne – Haute” better known as “Napoleon’s Nose”.
It is a cheese made from pasteurized sheep's milk created by Dominique Bouchait, Meilleur Ouvrier de France.
Dominique Bouchait was inspired by an old recipe from the Pyrenees.
The Napoleon is washed daily and is stored in cold cellars, which allows for more powerful aromas on a very fine dough texture.
The maturing process lasts at least 10 months.
The Napoleon is characterized by its fruity and animal taste.
Tradition has it that even when "old" this sheep's cheese is still rich in suppleness.
