Mont Royal “Le Napoléon," or "Napoléon Commingeoi," is an artisanal sheep’s milk cheese from Montréjeau, a town locatied at the foot of the French Pyrenees. It is produced and matured by Les Fromagers du Mont Royal, the family cheesemaking business associated with renowned affineur Dominique Bouchait. 

Le Napoléon is made from pasteurized sheep’s milk, specifially Manech sheep, and is a pâte pressée non cuite, or uncooked pressed cheese. The traditional version is matured for a minimum of 10 months, developing a firm brown natural rind while retaining a surprisingly supple, tender interior. 

During affinage, the cheeses are traditionally tended by hand in Mont Royal's cellars. The wheels are washed, rubbed, turned and monitored to ensure that they mature slowly without becoming excessively dry.
