When Edmond de Ayala founded the House in 1860, he focused on crafting a champagne with a singular and recognizable style, now known as Ayala Brut Majeur. A pure and balanced champagne that reveals the diverse personalities of the crus of the Champagne terroir. 

Crafted from a unique diversity of crus in Champagne, this cuvée is a blend of multiple crus and vintages, with Chardonnay as the dominant grape variety. To preserve its purity, the House applies its expertise in meticulous, hands-on winemaking, striving for minimal intervention. Micro-vinification in 120 small stainless steel tanks, allowing for high-precision blending. 3 years on lees on average.

As an owner of 22-hectares of vineyard across iconic villages such as Aÿ, Dizy, Chouilly, Oger, Champvoisy, Passy-Grigny, Grauves, and Vertus, Champagne AYALA is fully committed to a sustainable future. 7 hectares are already certified for High Environmental Value (HVE) and Sustainable Viticulture in Champagne (VDC), and the House is taking a new step: its entire vineyard is currently converting to organic farming, with official certification expected by 2025. This initiative reflects AYALA’s deep dedication to preserving its living heritage in alignment with current and future environmental challenges.
