ABOUT THE WINE

Bruno Paillard’s Première Cuvée Extra-Brut is not defined by a vintage but by the house’s vision of style: purity, minerality, and finesse. It is composed of Pinot Noir (45–50%), Chardonnay (33–35%), and Pinot Meunier (15–20%), sourced from over 30 crus across Champagne, with a significant portion of reserve wines—often up to 50%—some aged for over 10 years in tank.

Fermentation occurs in a combination of stainless steel and barrel, with careful bâtonnage for texture, and the wine spends 3–4 years on the lees before disgorgement. True to its “Extra-Brut” label, the dosage is low (less than 6 g/L), allowing the terroir expression and freshness to shine through.

In the glass, the Première Cuvée reveals a layered and precise profile—zesty lemon, pear, chalk dust, and hazelnut—lifted by an energetic mousse and framed by vibrant acidity. It’s equally suited as an apéritif or a pairing for refined dishes such as oysters, crudo, sashimi, or roasted poultry with lemon and herbs.

ABOUT THE PRODUCER

Bruno Paillard founded his eponymous Champagne house in 1981, establishing a reputation for crafting elegant, terroir-driven Champagnes with a distinctively dry and linear profile. One of the few independent, family-owned maisons in Reims, Paillard focuses on low-dosage, high-precision wines built around purity, longevity, and expression of place.

The estate now owns over 30 hectares, including prime sites in the Montagne de Reims, and sources fruit from trusted growers across the region. All vineyards are farmed sustainably, with increasing adoption of organic and biodynamic principles. In the cellar, long aging on lees, use of reserve wines, and a commitment to transparency (disgorgement dates are listed on each bottle) are central to the house philosophy.
