2021 Casa Rojo "Moltó Negre" Grand Cuvee Cava, Brut Nature, Penedès, Spain
Moltó Negre shows ripe pome fruit such as pears, apples, apricots and grapefruit on the nose. Subtle yeast notes give the aroma depth. Dry, firm on the palate with lots of freshness and lively perlage. The finish is herbal with lots of grapefruit.
ABOUT THIS WINE
This 2021 vintage was harvested by hand during the first week of September, always according to previous sampling, ensuring its optimum ripeness point. The skins were macerated for 2 hours to extract the maximum aromatic precursors of the grape variety. Next, a soft and light press, obtaining the must flower to make the base wine. Fermented in stainless steel tanks at low temperature (16ºC). Once the fermentation is finished, they obtain the base wine, then the second fermentation takes place in the bottle. They carry out the tirage (bottled for the second fermentation), and leave the bottles in the cellar to ferment and age for a minimum time of 10 months. Aging of fine lees for 5 months. Once this time has elapsed, they proceed to the final disgorging and corking for shipment.
ABOUT THIS PRODUCER
Casa Rojo was born in 2009 without its own cellar or vineyard, but rather like a dream. An itinerant oenological project, without limits or family ties, but with the desire and the conviction of being a new form of free enology. The founders had only one goal: to be happy. They made wines with the vines we fell in love with and traveled to the most remote corner of wine production. They released the imagination and produced ten wines throughout Spain, with indigenous grapes that exhibited different profiles of viticultural wealth. Thus was born THE WINE GURUS, and they liked them. It was then that the story of BODEGA CASA ROJO began. In 2015, after six years of hectic oenological activity and constant learning, they returned home to the south and with the help of the family (and a bank) they built the winery and planted their own vineyards in the unique Paraje de La Raja. , a dream valley located between the Sierra del Carche and the Sierra de La Pila, in the Altiplano of the Murcia region, where the second phase of their life begins. Today they have 23 hectares of Monastrell, Garnacha and Syrah.
