“ADN de Foudre Trois Cépages” is a strikingly composed Extra Brut Champagne vinified and aged entirely in large oak foudres. The wine is a field blend-style cuvée, crafted from equal parts Pinot Meunier, Pinot Noir, and Chardonnay—all sourced from Mignon’s biodynamically farmed vineyards in Le Breuil and Festigny, in the Vallée de la Marne. The clay-limestone terroirs and meticulous vineyard care yield fruit of depth and purity, essential for a foudre-aged wine of this clarity.

Fermentation with native yeasts takes place in oak foudres, followed by extended lees aging. The influence of wood is subtle but texturally significant, adding breadth and spice while preserving freshness.
