ABOUT THIS WINE

“Trois Contrées” (Three Regions) is a single-vintage, multi-parcel cuvée composed of 100% Pinot Noir from three villages in the Côte des Bar: Bar-sur-Seine, Merrey-sur-Arce, and Gyé-sur-Seine. These sites offer a complex interplay of Kimmeridgian and Portlandian limestone soils, contributing to the wine’s mineral edge and structural clarity.
Fermentation is carried out with indigenous yeasts, and a portion of the wine is vinified in oak barrels for added texture. Aged on the lees for around 30–36 months and finished with a low dosage (Extra Brut, ~2–3 g/L), the wine is dry, focused, and layered. It’s ideal with oysters, sashimi, or aged cheeses like Comté.

ABOUT THIS PRODUCER

Domaine La Borderie is a small, family-owned grower estate in the Côte des Bar, run by brother-sister team Simon and Marie Signoret. With deep roots in the region and a progressive approach to viticulture, the domaine farms organically and biodynamically, with a strong commitment to biodiversity and soil health.
La Borderie’s wines reflect the depth and personality of the Côte des Bar’s terroir—particularly its signature Pinot Noir—expressed through thoughtful, minimal-intervention winemaking. “Trois Contrées” is the domaine’s flagship cuvée: elegant, expressive, and a standout example of the new generation of grower Champagne.
