ABOUT THE WINE

“Les Rocheforts – Terroir de Bisseuil” is a single-village, single-parcel Blanc de Blancs Champagne made from 100% Chardonnay sourced from the 1er Cru village of Bisseuil, situated on the eastern edge of the Montagne de Reims. The soils here are a mix of chalk and clay, which lend a steely backbone and precise minerality to the wine. Calsac, a young and passionate grower, works organically in the vineyard, with a commitment to showcasing the individuality of place.

Vinified with native yeasts and partial malolactic fermentation, the wine is aged on lees for extended periods (often around 36 months or more), resulting in layered complexity and textural finesse. Dosage is kept low (Extra Brut or Brut Nature levels, depending on the release), to allow the purity of the Chardonnay and the terroir’s salinity to come through. This Champagne is a natural fit for crudo, caviar, creamy seafood dishes, or aged goat cheeses.

Etienne Calsac is one of the rising stars of the Champagne region, crafting precise, terroir-driven wines from a small domaine based in Avize. After taking over his grandparents’ vineyards, Calsac launched his own label with a clear philosophy: farm responsibly, ferment naturally, and bottle Champagnes that express vineyard character without makeup. The estate is now farmed organically, with cover crops, biodiversity, and soil health at the forefront.

Working primarily with Chardonnay from Grand and Premier Cru villages like Avize, Bisseuil, and Grauves, Etienne vinifies in small lots, often parcel by parcel, using a mix of stainless steel and neutral oak. His wines are bottled with minimal sulfur, disgorged late, and finished with very low or no dosage to preserve transparency. Calsac represents the new wave of Champagne grower-producers: thoughtful, precise, and deeply rooted in a sense of place.
