ABOUT THIS WINE

100% Pinot Fin (Pinot Fin is an ancient clone of Pinot Noir that is very rarely found anymore in Burgundy) from vineyards between the Burgundian villages of Tonnerre and Molosmes with Kimmeridgian soils like Chablis, but a climate that is found more in Champagne (which is only a few kilometers away). 

Hillsides with south and south-east exposure.

The domaine uses a pneumatic press for a gentle extraction, and then it goes through alcoholic and malolactic fermentations with natural yeasts.  The base wine, or vin clair, is kept in stainless steel tanks for one year, then blended and bottled for the second fermentation, à la méthode traditionnelle.

ABOUT THIS PRODUCER

Lucie Thiéblemont is a winemaker who grew up in Champagne and, upon joining the company, wanted to do a few things differently. While the small Pinot Noir vineyard was initially used for producing wines for her own consumption, it is now being used for a Cremant!

In itself, this is a fairly logical choice, as Chablis is closer to the Champagne region than to the rest of Burgundy. However, it does sound quite exciting and unusual: Pinot Noir from Chablis is used for a clear sparkling wine in the same way as Champagne. The quality actually speaks for itself: quite exciting and special.
