ABOUT THIS WINE

“Champ Viole” comes from a single parcel of Chardonnay planted in 1989 on Kimmeridgian clay-limestone soils in Celles-sur-Ource. The plot, named for the violets that bloom in spring, produces fruit of striking precision and aromatic lift. Fermentation occurs with native yeasts in stainless steel, and malolactic fermentation is completed. The wine rests sur lattes for a minimum of 36 months, enhancing its texture and complexity, before disgorgement with a minimal Extra Brut dosage. This Blanc de Blancs presents a taut and mineral-driven profile—think citrus oil, white flowers, and wet stone—carried by electric acidity and a subtle, creamy mid-palate. It’s a natural partner for crudo, caviar, or aged goat cheese.
