Palet de Bourgogne was created by Raymond Gaugry, a famous Burgundian cheese maker. It is an artisan cows’ milk cheese which is matured for at least 1 month.
It has a strong and persistent aroma (although not as strong as Époisses) and a rind which is brine washed every 2 days with Marc de Bourgogne. It has a soft, velvety interior and a pleated orange rind.
