Supple and aromatic, Abondance brings gentle fruit, herbal notes, and a silky texture that anchors the blend.
Typically produced as medium-sized wheels with gently rounded edges, Abondance is recognizable by its supple paste and smooth, natural rind. The wheels are large enough for slow, even aging, yet smaller than Comté or Beaufort, which helps preserve its aromatic freshness and silky texture. When cut, the paste is elastic and slightly glossy—an early sign of excellent meltability.
Comté “36 Months” – 0.5 lb

Deeply aged and complex, this Comté adds layers of toasted nut, browned butter, and umami richness—structure and soul in the pot.
Comté is unmistakable: very large, flat wheels, often weighing over 80 pounds. This size is intentional—it allows for long aging (often 24–36 months or more) without drying out. The thickness of the wheel protects the interior, enabling the development of deep nutty, savory flavors. When sliced, the paste is firm and uniform, a reflection of its structure and concentration—ideal for adding depth and complexity to fondue.

Beaufort is known for its distinctly concave sides, a signature feature created by the traditional wooden molds used during production.
